Peanut Butter Cookies (no flour, no butter)

Ingredients
1 cup peanut butter (smooth)1 cup sugar (you can use substitute as well)1 egg, large1 teaspoon pure vanilla extract
Directions
Preheat the oven to 350 F. Line a large baking sheet with parchment paper.

In a mixing bowl, combine the peanut butter, 1 cup sugar, the egg and vanilla. Stir well with a spoon.

Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet.

With a fork (dipped in sugar to prevent sticking) press a crisscross design on each cookie. ((Optional))

Bake for 12 minutes.

Remove from the oven and cool slightly before removing from pan.

Serving Size: About 25 cookies.
