Date and Almond Truffles - Adapted

Ingredients
10 dates, pitted1 cup almond flourjuice and jest from 1/2 lime2 T carob powder1 T cocoa powder
Directions
Place the dates, almond powder, carob and cocoa powder, lime rind and juice in a food processor. Blend until the mixture forms a stiff ball.

Remove blade and roll date mixture into balls. Roll each ball in cocoa powder to coat.

Cover and keep in the fridge for up to 3 days.
