Introduction

I realized half way through that I didnt have eggs, so I made it without. The recipe calls for 2 lg egg whites, but was perfectly fine with none. You can also use veg oil if you prefer. A great snack anytime of day, my 2 yr old loves it and has no idea there is cauliflower in it!!! We only eat a small slice as our serving size so that is what is calculated, you may eat more if you have it for breakfast though....enjoy! Ingredients

    nonstick cooking spray
    3/4 c whole wheat flour
    1/2 c all purp flour
    1/2 tsp baking soda
    1/4 tsp baking powder
    1/2 tsp salt
    1/2 tsp cinnamon
    1/2 c packed brown sugar
    1/4 c canola oil
    1 1/2 c well mashed banana
    1/2 c cauliflower puree
    1 tsp vanilla extract

Directions

Steam cauliflower and puree 1/2 c, set aside.
Preheat oven to 350.
Spray a 9x5 loaf pan with nonstick spray.
In a ziplock, mix flours with baking soda, baking powder, salt, and cinnamon. Set aside.
In lg bowl, mix the sugar and oil with a wooden spoon til well combined. Mix in egg whites if using, then banana, caul puree, and vanilla. Andd flour mixture and mix til just combined.
Pour batter into pan, bake til a toothpick comes out clean...55-60 minutes. Let cool on a rack for 5 minutes then turn out onto rack to cool before serving.

    I have no kids - but I LOVE this cookbook. I've been experimenting with the various recipes. This time, I subbed in apple sauce for oil, sweet potatoe puree for cauliflower and added in pumpkin pie spice (1 tsp) with the cinnamon. SO GOOD and perfect for fall. - 10/5/11

    I use Almond extract insetad of vanilla, and I love all purpose white rice flour and almond flour instead. I also add some chocolate chips for a desert treat. My whole family loves it. I add extra cin and its so much better. I'm going to try the applesause and sweetpotato next! <3 - 7/20/12
