Zucchini Caserole

Ingredients
5c Shredded zucchini (or a mix of green & yellow squash)1 small onion (grated)1/2 c. shredded carrots (about half of a large carrot)1 egg4 egg whites1/4c. olive oil1.5c. Heart Smart Bisquick2oz Pecorino Romano (grated)1 TB dried ParsleySalt & Pepper to taste I've also added mushrooms or whatever leftover veggies were in the fridge.
Directions
Preheat oven to 350. Mix all ingredients together in a large mixing bowl. Add mixture to a greased large (9x13) casserole and bake for 45-60min (or until toothpick comes out clean) Serve when cool.
