Baby Apple Crisp

10 Apples1 T. Lemon Juice1/4 C Brown Sugar2 T. Corn Starch1 tsp. Cinnamon1/4 tsp Nutmeg1/4 tsp Salt1/4 tsp Real Vanilla Extract1/2 C Butter (1 stick), softened1/2 C Whole Wheat Flour1 C Old Fashioned Oats1 C Brown Sugar1 tsp CinnamonCupcake liners
Peel and cut apples into chunks into large mixing bowl; toss with lemon juice. Add brown sugar, cinnamon, nutmeg, salt, vanilla and corn starch; stir until thoroughly combined.
Place liners in muffin tins and evenly distribute apples in liners.
In another bowl, combine butter, flour, oats, sugar, and cinnamon. Stir until completely combined (it's much more fun to use your hands than a spoon :) ).
Sprinkle topping over apples. (Try not to put too much topping on each because it will keep the topping from getting crisp)
Bake at 375 for 10 minutes, or until topping is slightly browned.
