3 Eggs2 c. sugar1 tsp. baking soda3 c. flour2 tsp. cinnamon1 c. canola oil3 tsp. vanilla1 tsp. salt1/2 c. chopped walnuts2 c. zucchini grated, raw, peeled
Mix together eggs, oil, sugar and vanilla. Stir together soda, salt, flour, and nuts. Add to creamed mixture. Stir in zucchini and cinnamon. Pour batter in greased pan. Bake at 350 for 1 hour.
Serving Size: Makes 1 big loaf, or 4 small loaves
