Quinoa Salad w/Cumin Scented Vegetables

1 pkg (225 g) quinoa2 tbsp olive oil1/2 cup diced carrot1/2 cup onion1/2 cup diced sweet red pepper2 cloves garlic2 tbsp ground cumin2 tbsp parsley1/2 tsp salt
In a small saucepan, bring 2 cups of water to a boil. Stir in quinoa. Reduce heat to low and simmer covered for 15 min. Remove from heat and let stand 5 min.
In a large fry pan, heat oil over med-high heat cook carrot, onion, red pepper, garlic and cumin for 10 min, stirring frequently, or until vegetables are tender. Stir in cooked quinoa, parsley and salt. Serve hot or cold.
