Blueberry Peach Crumble

Ingredients
4 cups cut and peeled peaches1 cup blueberries2 tablespoons lemon juice1 teaspoon cinnamon1/2 stick of butter (1/4 cup)1 cup applesauce1/8 teaspoon powdered stevia1/2 cup whole wheat flour1/2 cup quick oats.
Directions
mix the stevia with the applesauce

In an 8x8 deep glass dish combine peaches, blueberries and 1/4 cup of the sweetened applesauce. add lemon juice, cinnamon and mix well.
sprinkle lightly with stevia powder

combine whole wheat flour, oats and butter and remaining applesauce. work with your fingers til it is combined.

dollop over the fruit.

bake at 350 for 40 min.

    We loved this recipe! Since we didn't have any Stevia on hand, we used 1/2 cup of Splenda Brown sugar blend in the topping instead. We also skipped the lemon juice. Lovely, fruity, just sweet enough dessert that was simple to make. - 8/18/08
