6 egg yolks¼ cup truviapinch of salt2 cups cream1 cup coconut milk*Optional- Vanilla extract, coconut extract, vanilla bean, coconut mana, almond butter,chocolate powder
Whisk egg yolks, truvia and salt together.
Heat cream and coconut milk until hot, but not boiling.
Slowly pour the hot cream and milk over the yolk mixture, while whisking (to avoid the egg from beginning to cook).
Pour back into saucepan on low heat, until the mixture thickens just a bit (and will stick to the back of a wooden spoon). For me, it takes about 10-15 min.
Once cooled, either pour it into popsicle molds or into the ice cream maker.
