Paneer Curry--Hacked

Ingredients
1.5 TBS oil1/2 pound fresh paneer (cubed)3 cups chopped tomatoes3 cloves garlic 1 inch grated fresh ginger1TBS sweet curry powder or mix of sweet and hot (or whatever mix of spices you like)pinch hot pepper flakes1/2 cup coconut milk
Directions
Heat oil in frying pan and fry paneer cubes until brown. Remove from pan. Add ginger and garlic to pan and let soften for a few minutes. Add spices and stir around until fragrant. Add tomatoes and cover, let cook until they have softened and become liquidy (15 minutes or so). Add Paneer back and heat gently. Add coconut milk, stir gently and heat through.
