Vegan Cucumber Avocado Cashew Salad

Ingredients
2 teaspoons vegan flaxseed oil1 teaspoon extra virgin olive oil1 teaspoon organic balsamic vinegar2.5 ounces organic mixed baby greens1/3 cup organic cucumber, peeled, sliced¼ cup organic chopped raw cashews½ large organic avocado, sliced
Directions
To make dressing, put the first three ingredients in a small bowl and briskly whisk until smooth. To make salad, place mixed baby greens in a large bowl. Pour dressing over salad and toss to coat all pieces. Place mixture of dressing and greens on a large salad plate. Top with organic peeled cucumber slices and organic chopped raw cashews. Arrange avocado slices in a pattern on top. Serve immediately.
