Cream of Mushroom Soup- WW

2 cups Brocolli2 cups Cauliflower1/2 cup each sliced carrots, celery, onion1 cup chicken broth1 cup skim milk1 tbsp butter2 cups sliced mushrooms1 garlic clove1 tbsp parsleysalt & pepper to taste
bring all veggies except mushrooms to boil in chicken broth (may need to add water to cover) salt & pepper
until soft, 15-20 min. add milk. pour in batches into a blender and process until smooth. In 2 1/2 quart saucepan melt butter, add garlic and mushrooms, saute until lightly browned. Add pured vegatable mixture and parsley to mushrooms and cook stiring occasionally until mixture is cooked thoroughly 5-10 min.
