Ginger Butternut Squash Soup

Ingredients
2 Tbsp. Light Butter3 cloves garlic, minced1/2 cup minced onion3/4 tsp fresh ginger root, minced1 medium butternut squash, peeled and seeded2 - 10 oz cans beef broth or 2.5 cups1 oz sherrypinch nutmetsalt & pepper to taste
Directions
Melt butter in a large soup pot. Saute garlic, onion, and ginger until tender. Cut squash into 1/2" slices. Add to pot, along with remaining ingredients. Bring to boil and simmer 15 - 20 minutes. Puree in food blender.
