Mulligatawny Soup

Ingredients
1/2 cup chopped onion2 stalks celery, chopped1 carrot, diced2 tbs butter1.5 tsp curry powder4 cups chicken broth1/2 apple, cored and chopped1 skinless, boneless chicken breast half - cut into cubes. Can also use leftover chicken without the bones and skinsalt to tasteblack pepper to taste1 dash dried thyme
Directions
Saute onions, celery, carrot, and butter in a large soup pot. Add curry and cook 5 more minutes. Add chicken broth and bring to a boil. Simmer about 1/2 hour, stirring occasionally. Add apple, chicken, salt, pepper, thyme. Simmer 15 - 20 minutes.
