Nicoise Salad

Ingredients
2 - 5 oz cans of water packed tuna2 small red potaotes- boiled and cooled slightly1 small avacado- sliced2-4 cups green leaf lettuce, cut into bite size pieces4-6 radishes, sliced thinly1 cucumber, seeded and sliced1 med tomato sliced4-8 black olives , sliced3/4 c Extra Virgin Olive Oil1/2 c. fresh lemon juice1 tsp. Dijon mustard3-4 leaves fresh basil, sliced thinlysalt and pepper as desired
Directions
boil the red potatoes until you can pierce them with a fork. Drain and let cool slightly. Slice and arrange around individual plates on a bed of lettuce. Arrange the drained tuna on to the center of the lettuce and all of the rest of the ingredients should be arranged on the plate to look pretty. Top with the dressing:
Combine the olive oil, lemon juice, fresh basil leaves, Dijon mustard, salt and pepper. Shake vigorously and pour on top of the salad.
