Ingredients
8oz - 90% lean hamburger2 cup - Uncle Ben's Ready Rice Vegetable Harvest2 - tomatoes (medium)6 - fresh mushrooms1 cup - chopper bell pepper (pick your favorite color)1 cup - spinach3 stalks - celery1 - onion (medium)5 cloves - garlic Old El Paso Taco Seasoning (Reduced Sodium)1/8th cup - shredded cheese (flavor of choice)3 tbsp - fat free sour cream
Directions
Use cooking spray or olive oil to coat medium size skillet. Sautee hamburger with garlic over medium heat until browned. Add vegetables and cook down for 5-10 minutes. Add rice mix and heat through. Season as needed.

Serve with small amount of shredded cheese and sour cream, and enjoy.
