Hellen's Chicken Chili

Ingredients
4 skinless boneless chicken breasts cut into 1/2 cubes1 each red and green pepper chopped1 onion chopped2 cloves garlic1 12 oz tin low or sodium free,red kidney bean ( do not rinse or drain)1 12 oz tin diced tomatoes, low or sodium free1 5oz tin tomato paste1/2 tsp ground cumin1/2 tsp ground coriander1-2 tsp chili powder1/4 tsp cayenne pepper
Directions
In stock pot coated with cooking spray, saute on med/high, chicken breast, onion, garlic and spices until chicken almost cooked. Add peppers and saute for another 2-3 minutes. Add kidney beans, diced tomatoes and tomato paste. Mix well and bring to a slight boil, reduce heat and simmer for 20-30 minutes until peppers are tender.
