Low-fat Cheddar Cheese Grits

Ingredients
3/4 cup quick cooking grits2 cups skim milk1 1/4 cup water1 cup shredded low-fat cheddar cheese1 tsp salt1 tsp pepper1 tbsp margarine
Directions
Combine water and milk in pot and bring to a boil. Slowly whisk in grits. Simmer for 5 minutes, covered, stirring occassionaly. Once grits have thickened, remove from heat and stir in cheese, margarine, salt and pepper until combined. Serve and eat!
