1 tsp grated lime rind1/2 cup fresh lime juice1/4 C olive oil1 tsp brown sugar1 tsp chili powder1/2 tsp ground cumin1/2 to 1 teaspoon salt1 (15oz.) can black beans, rinsed & drained1 (15.5 oz.) can black-eyed peas, rinsed & drained1 1/2 cups frozen whole kernel corn, thawed1/2 small green bell pepper, chopped1/3 C chopped fresh cilantro6 Romaine Lettuce Leaves
Wisk together first 7 ingredients in a large bowl. Add black beans and next 4 inredients, tossing to coat.
Cover and chill 30 minutes.
You can garnish with sliced avocado, but will need to add that to your calories for the day.
