caramelized onion and lentil soup

Ingredients
2 T olive oil2 large yellow onions-chopped1 1/2 c dried lentils-rinsed 8 cups brothsalt and pepper to taste
Directions
Heat oil in stock pot and add onions. Cook until slightly browned and sweet. Add all other ingredients and bring to a boil. Lower heat and simmer until lentils are soft.

Serving Size: makes 8-1 cup servings
