Lemon Squares

3 T margarine3 T unsweetened applesauce1/4 C sugar1/2 C all purpose flour1/2 C whole wheat flour2 eggs3/4 C sugar1 T all purpose flour1 T whole wheat flour1/4 t lemon peel zest3 T lemon juice1/4 t baking powder
Preheat oven to 350.
Grease an 8x8x2 baking pan.
Beat butter and apple sauce for 30 seconds, ass the 1/4 cup sugar and 1/4 teaspoon salt, beating till fluffy.
Stir in the half cups of flours.
Pat dough into bottom of pan.
Bake in a 350 over for 15 minutes.
Meanwhile, beat eggs, add remaining sugar, flours, lemon peel, lemon juice, and baking powder.
Beat 3 minutes or till slightly thickened.
Pour over baked layer.
Bake and additional 25 to 30 minutes longer or till light golden brown around edges and center is set. Cool. Sift powdered sugar over top, if desired (not in nutrition info).
