Lentil Potato Salad

Ingredients
4 small potatoes (about 3.5 cups diced)1.5 cups dried lentils2 ribs celery chopped1 large carrot chopped3 scallions (about 1/4 cup chopped)Dressing:1/4 cup vinegar1/4 cup olive oil1 Tbsp fresh rosemary (less if substituting dry)2 Tbsp fresh basil (less if substituting dry)2 cloves garlic
Directions
Boil, peel, and dice potatoes while lentils are cooking (cover with water, bring to boil, reduce to simmer and cook for about 20 minutes). Combine potatoes, lentils and veggies. Combine dressing ingredients and mix in a blender (while drizzling in olive oil). Stir dressing over salad and let it sit at least an hour in the refrigerator before serving.
