Hawaiian Chicken Burger

Ingredients
6 Baby carrots or 1 large, peeled and cut1 C. Celery, diced1 C. Onions, diced1 C. each-Red and Green bell peppers, diced1/2 C. Crushed pineapple in juice, drained1 lb. Ground Chicken1 Tb Lite Soy Sauce1 C. Panko crumbsSeasoning to taste
Directions
Using a food processor, loosely chop all vegetables and add first 5 ingredients. Pulse until it forms small pieces. Add ground chicken and soy sauce. Pulse until well combined. Stir in Panko crumbs and seasoning to preference. Using a 1/2 measuring cup, scoop out, form patties and place in refridgerator until ready to cook. Can be cooked in a non-stick pan lightly sprayed, broiled or grilled on aluminum foil sprayed with non-stick.

    Really easy and tasted great. Nice and moist. Could use a little more pineapple flavor but as a diabetic I have to watch sugar and carbs but we will have it again - 5/15/20
