Pork and Apple Soup

1 lb.Pork Tenderloin, cubed1/4 lb. Applewood Smoked bacon, cicedYellow onion, diced 1 cup celery, diced1 cup carrot, diced.5 head of green cabbage, diced4 cloves of garlic, minced2 cups sweet potato, diced2 Cortland Apples, diced2 Tbl. Olive Oil1/4 Cup SherrySalt and Pepper to taste1 Tbl. fresh Rosemary8 Cups Chicken Stock
Heat 1 Tbls. of Olive oil and brown the pork and bacon.
Remove and set aside.
Deglaze the pan with the sherry. Remove and set aside.
Heat the remaining Oil and caramelize the onions, celery and garlic. Add the remaining ingredients along with all of the reserved ingredients and simmer for about an hour.
