Creole Cod

Ingredients
4-4 oz cod filets, 1" thick2 t olive oil2 t brown or dijon mustard1/2 t creole seasoning1/2 t salt1/2 t black peppercooking spray
Directions

Preheat over to 400*. Arrange the fish on a baking sheet sprayed with cooking spray. Combine the oil, mustard and spices, and spread evenly on top of the fish. Bake 15-17 minutes or until the fish flakes easily with a fork.

Serve with chopped parsley and a squeeze of lemon if desired.
