Ginger Molasses Oatmeal Cookies (Wheat free, no added sugar)

1 Cup Rolled Oats (Ground into flour)1/3 Cup Rolled Oats (Unground)1/4 tsp salt 1 tsp Baking Powder1/2 tsp Cinnamon1/2 tsp Pumpkin pie spice1 tsp finely grated ginger root1 tsp vanilla extract1/2 of 1 mashed banana1/3 cup unsweetened apple sauce2 tbs Vegan margarine2 tbs Molasses2 tbs Agave Nectar
Preheat your oven to 375 degrees Farenheit
Combine the dry ingredients (Oat flour, Oatmeal, baking powder, salt, cinnamon, pumpkin pie spice) in a small bowl. Stir to mix evenly
Let the banana, apple sauce, and vegan margarine warm to room temperature. Combine all of the wet ingredients. Whip wet ingredients together using a stand or hand mixer (or wooden spoon or whisk). You will see flecks of margarine in the mix, and that is ok. They will become incorporated when you add the dry ingredients. Mix until consistency is smooth with small margarine flecks.
Slowly add the dry to the wet ingredients. Blend together until the batter is well mixed.
Line a cookie sheet with a sheet of parchment paper (or lightly grease the cookie sheet). Scoop out rounded tablespoons of batter onto the cookie sheet. Space cookies 2 inches apart. Bake for 8-12 minutes at 375 (until the bottoms of the cookies are browned and the tops are slightly stiff)
Makes 15-16 cookies.

You could easily substitute whole wheat (pastry) flour, brown rice flour, or all purpose flour for the ground up oatmeal. For non-vegans, an egg can be used in place of the banana.

Thank you so much for this recipe. My husband, who is trying to reduce his cholesterol, needed a healthy goody to snack on, and this is it!! He's diabetic, so I replaced the agave syrup with 2 packets of Splenda, and added a tablespoon of ground flax seeds to increase the omega 3. Lovely treat! - 12/1/09
