0.5 tbsp rapeseed oil1 onion, sliced1 clove of garlic minced2 inch ginger, peeled and crushed2 chillies chopped1 tsp tumeric2 cardamom pods crushed2 tsp garam masala2 tsp curry powder1 tsp ground corriander2 large chicken fillets(skinless & boneless) cubed2 400g canned chopped tomatoes1 lime juicedSmall bunch of corriander
Heat veg oil in a large pan
Add onion and cook for 5 mins
Add chillies, garlic and ginger and cook stirring constantly for 3 mins.
Add the tumeric, cardamom pods, garam masala, curry powder and ground corriander and mix well.
Increase the heat and add the chicken fillets.
Add chopped tomatoes and 100ml water, bring to the boil and simmer for 20 mins.
To serve, add the the lime juice and chopped fresh corriander
