Cooked chicken breast (diced), 12-14 ouncesRaisins, .25 cup, packedPecans, .25 cup, choppedCelery, raw, 1 stalk, medium (7-1/2" - 8" long)Apple, Gala (medium), .5 appleFresh Chives, 3 tbsp choppedCurry powder, .5 tspPepper, black, .5 tspLemon juice, 1 tbspLight Mayonnaise (Mayo), 1 tbspHoney Mustard, 1 tspSalt, .5 tsp
1. Combine curry powder, pepper, lemon juice, mayo, and honey mustard in a medium bowl, stirring with a whisk until well blended.
2. Add the chicken, raisins, pecans, celery, apple, chives, and salt
3. Stir mixture well to combine. Cover and chill. This salad is best if eaten the day after preparation allowing time for the ingredients to mingle, giving a fuller flavor.
