Blackberry Clafouti

Ingredients
3 cups ripe blackberries 6 tbsp. sugar, divided ¾ cup all-purpose flour ½ tsp. baking powder ¼ tsp. salt 3 eggs (well-beaten& at room temperature) ¾ cup milk (I used half & half) 3 tbsp.vanilla extract (I used Vanilla bean paste) 2 tbsp. melted butter Powdered sugar for dusting
Directions
Preheat oven to 375 degrees.

Generously butter a 10 inch shallow baking dish or glass pie plate.

Spread berries on buttered dish. Sprinkle evenly with 3 tbsp. sugar.

Sift flour, remaining 3 tbsp. sugar, baking powder, & salt into a medium bowl.

In a separate bowl, whisk eggs & milk together. Pour liquid ingredients over dry ingredients. Whisk to incorporate all ingredients.

Stir in vanilla & melted butter.

Pour batter over berries.

Place baking dish on a baking sheet. Bake on center rack of oven until top is slightly puffed & golden brown…about 30 minutes.(Edges will be lightly brown & starting to pull away from the side of the pan.)

Sprinkle clafouti generously with powdered sugar.

Cut into wedges & serve.
