Paula'a Pumpkin filling (custard, or for pie)

2 eggs1/2 cup sugar1 can of pumpkin (smaller size)2 tsp cinnamon1/2 tsp ginger1/8 tsp nutmeg1/2 tsp cloves1 can evaporated non-fat milk
Beat eggs slightly. Stir in sugar. Stir in pumpkin. Stir in spices. Stir in milk. Divide between 8 ramekins.
Place ramekins in larger casserole dish. Boil a pot of water. Preheat oven to 400. Place casserole dish with ramekins in oven, and fill around the ramekins with boiling water. Bake until knife inserted in center comes out clean, about 30 minutes.
Serving Size: 8 ramekins, or filling for one 9 inch pie
