Cheesy Ham & Veggie Quiche

1 c. chopped raw broccoli1/2 c. chopped green pepper1/4 c. canned mushrooms1/4 c. chopped roasted red peppers, drained1 c. Rotel tomatoes w/ green chilies, drained2 c. Egg Beaters4oz Reduced Fat Mexican cheese blend (shredded)2oz Oscar Mayer Honey Ham1 TBSP Bacon Bits (Real, not BacOs)1/2 tsp Garlic Powder1/2 tsp Onion Powder1/4 tsp Salt1/2 tsp Bacon Salt
Preheat oven to 425 degrees.
Mix all ingredients, except for 1oz of the cheese.
Spray 13x9" casserole dish with cooking spray.
Pour mixture into pan and cover with foil.
Cook for 40 minutes.
Remove foil, sprinkle with remaining cheese and return to oven for 5 minutes.
