Greens Salsa

1 cup of Spinach, fresh, 1 cup1/2 a Cucumber (with peel)1/4 of a large red Onionsfistfull of Cilantro 3 tablespoons of Mushrooms (soaked in soy sauce)1/2 Avocados 2 tbsn Cumin powder 2 tsp Lemon Grass Gourmet Garden Herb BlendSplash of Lime Juice1 tbsp Kikkoman Lite Soy Sauce1/2 a Yellow Pepper (any bell pepper)1 tsp Ginger Root3 cloves Garlic
Chop and soak the mushrooms in the tablespoon of soy sauce. Chop each veggie and add all into a large bowl. Add the mushrooms at the end, along with all the seasonings and stir to mix well.
Serving Size: I have no idea how many actual servings this recipe yeilds. I was writing the recipe out to help myself count calories, so, I'd say anywhere from a couple of tablespoons to 1/2 cup, depending on how you're using it.
