Ingredients
430g cooked Butternut squash1 chopped onion1 teaspoon olive oilSprinkling of mixed herbs8 oz chopped mushrooms230g uncooked washed Collard greens466g Sweet potato (no skin)4 cups water
Directions
Zap the sweet potatoes & the butternut Squash in the microwave, in their skins to cook, chop the onion, add to a pan, add the olive oil and cook, add the mixed herbs.

Remove the skins off the squash and the sweet potato, add them to the pan along with the chopped greens and the sliced mushrooms.

Add 4 cups water and mix well, bring to the boil and simmer - a 5th cup of water may be needed.

Some may find this a little bland - so add some spicey seasoning if required.

Each serving 1 cup (8 oz)
makes 10 servings
