Easy Spanish Rice

Ingredients
1/2 lb of lean ground beef2 cups rice (jasmine is best)1/2 cup green pepper, chopped1/2 cup sweet onion, chopped1 tsp garlic, chopped1 reg can of petite diced tomatoes (I have used fresh when I can get good ones)2 tsp Cholula Chili Lime Seasoning1/2 tsp cumin, ground (optional)2 cups water (beef broth can also be used)
Directions
1. Brown ground beef adding chopped green pepper, onion, garlic and cumin (optional). When done add uncooked rice to pan (I use a dutch oven) and brown for a minute.
2. Drain the canned tomatoes into measuring cup and finish filling cup with water or broth to equal 2 cups fluid. Add tomatoes to meat, vegetable and rice mixture in pan.
3. Add chili lime seasoning then pour the 2 cups fluid into pan.
4. Bring to a boil then lower temp to simmer until rice is done (approx 30 minutes but check directions on your rice package).
5. Stir and serve.

Serves 6 or more.

This dish is even better the next day and freezes well. Great served with a salad and warmed tortillas. You can make it your own by adding corn, black beans or any other vegetable you like. The calories will still be very low.
