Slow cooker baked beans with garlic

4c dried beans1 can beer1tbsp canola oil1onion, chopped1tbsp sugar3 cloves garlic, diced1.5 tbsp molasses0.25c tomato paste1 bay leaf1tsp dried sage1tsp dried rosemary1tsp salt (or to taste)1tbsp cider vinegarwater
Rinse the beans and add them to the slow cooker with enough water to cover them by about two inches. Leave at least overnight.
The next day: mix the oil, onion, and sugar in a pan. Heat at medium high until the onion starts to brown, stirring regularly, then lower to medium low and cook until the onions turn golden brown, about 20 minutes. Watch carefully to make sure the onions don't burn. You can skip this step, but I think it adds depth to the flavour.
Meanwhile, drain the beans and add all other ingredients. Add enough water to cover the beans. Add the onions when ready and mix. Heat in the slow cooker on "High" for two hours, then turn on low and leave overnight, or about 8 hours.
Makes about 7 one-cup servings for a main dish, or 14 half cup servings for a side dish.
