2.5# boneless beef chuck/roast (nutri info uses beef stew meat)1 cup onion, diced1 cup green pepper, diced3 cloves of garlic, chopped small2 tbsp cooking oil (optional, not in nutri info)1 28 ounce can of diced tomatoes1 cup water6 oz can of tomato paste6 tbsp Chili Powder3 tbsp cumin2 tsp oregano1 tsp crushed red pepper1 tsp black pepper3 cans of kidney beans (15 oz each), drained

Combine all ingredients EXCEPT beans. Cover & cook slowly 1.5 hours (or crock pot for a day) add beans and cook for 20-30 minutes, uncovered.
