Almond Flour Chocolate Chip Cookies (GF)

Ingredients
1/4 cup softened butter2 tbsp. coconut oil1/3 cup xylitol1 tsp. vanilla1/2 tsp. xanthum gum1 large egg1/4 tsp. bkg. soda1/4 tsp. salt1.5 cups blanched almond flour (see tip)3/4 cup Hersheys dark chocolate chips1/2 cup chopped walnuts
Directions
With elec. mixer, mix butter, coconut oil and xylitol in large bowl til creamy. Add vanilla & egg and mix well. Add bkg. soda and salt and mix. Slowly mix in almond flour, 1/2 c. at a tim, til well blended. Fold in choc. chips and walnuts. Drop by rounded tablespoonfuls 3 inches apart on parchment paper-lined baking sheet. Bake 9-10 mins. at 350 til golden brown around edges. Allow to cool a few mins. on baking sheet, then remove to wire rack.
