2 cups orange juice2 large shallots, minced (about 2 tablespoons)1/4 cup apricot jam or all-fruit preserves2 teaspoons fresh thyme, leaves only1/4 teaspoon cayenne pepper
Place a small saucepan over high heat and add the juice, shallots and jam. Bring to a boil, then reduce heat to medium.
Cook, stirring often, until the mixture has thickened and reduced by half, about four minutes.
Remove from heat, stir in the thyme and pepper, and serve.
Serving Size: Makes 1/2 cup. One tablespoon per serving.
