One Bowl Orange Dessert Cake

CAKE2 medium Eggs2 1/3 of a cup Splenda1/2 cup nonfat Milk110 g Light Butter170 g Self Raising Flour (or Cake Flour with 1/2 tsp Baking Powder)2 tblsp Orange PeelSYRUP1/2 cup Orange Juice2 tblsp Splenda
Preheat oven to 350 deg F (180 deg C)
Place all the cake ingredients in bowl and beat for three minutes. Pour into a greased and lightly floured ring pan.
Cook for @ 30 mins or until a toothpick comes out clean when inserted into the middle
While cooking cake combine syrup ingredients in a saucepan and bring to the boil, simmer until it becomes slightly syrupy.
When the cake is cooked, turn out and pour over the syrup.

This has a nice flavor, but there's just not enough flour in the mixture to give it a true cakey consistency. It came out more gooey and sticky than a cake should. If I make it again, it will have to have more flour. - 7/3/08

I have made this cake numerous times and have yet to have it come out "gooey" I can only assume it wasn't cooked long enough.
