Mocha Chocolate Chip Banana Muffins

Ingredients
1 cup unsweetened applesauce1/4 cup canola ( vegetable ) oil1 cup granulated sugar3 ripe bananas (mashed)3 Tbsp. instant coffee granules, dissolved in2 Tbsp hot water1 tsp vanilla extract1 tsp banana extract (optional )2 1/4 cups all purpose flour1/4 tsp salt1 tsp baking powder1 tsp baking soda1 cup semisweet chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees C)
Blend oil, applesuace, sugar, egg, banana, dissolved coffee, and extract(s) in a food processor. ( I used my stand mixer ) Add flour, slt, baking powder, and baking soda and blend until flour disappears. DO NOT OVER MIX! Add chocolate chips and mix in with wooden spoon. Spoon mixture into paper-lined muffin cups. Fill 3/4 to the top w/ this recipe!
Bake for 25 minutes or until toothpick inserted comes out clean. Cool on wire racks.

I got 21 muffins from this recipe. Note that your nutritional annalysis will change depending upon how many muffins you get. Enjoy!
