Mozzarella, Cherry Tomato and Basil Skewers

6 wooden skewers 12 large basil leaves 1 pint cherry tomatoes 1 block low-fat mozzarella (cubed) 1 clove garlic, chopped a pinch of salt & pepper 1/8 tsp. red pepper flakes 1/4 cup olive oil 1/8 cup balsamic vinegar
Directions:
In a large bowl, combine garlic, salt, pepper, red pepper flakes, olive oil, and balsamic vinegar. Then add to the bowl. Mix well with the vinegar mixture. Cover and refrigerate for at least 1 hour. When ready to assemble the skewers, remove mozzarella (cubed) from the refrigerator. Add tomatoes into the mixing bowl and toss well with vinegar mixture. First, wrap a mozzarella (cubed) with a basil leave. Put it into skewer. Then add cherry tomato. Repeat again with wrapped mozzarella (cubed) and then followed by a cherry tomato. Repeat again if you prefer to have your skewer to have another set of wrapped mozzarella (cubed) and cherry tomato. Repeat steps for remaining skewers. Serve immediately
