2 cups grated zucchini1/2 t. salt1 egg1/2 cup Bisquick (heart healthy)or baking mix of your choosing1/2 cup grated parmesan cheese2 green onions (scallions) chopped1 t. dried basil (can use fresh equivalent)pepper to tasteolive oil to saute (optional)
Grate zucchini, add all other ingredients.
Mix thoroughly without overbeating
Pour into a PAM sprayed 9" square or round pan
Bake 25 minutes until slightly browned OR saute spoonfuls on lightly oiled hot griddle, turning once.
Serving Size: 9 3" squares or 16 2 1/2" fritters
