Asian Kale Rice Bowl

1 large bunch of Kale, chopped4 cups of cooked rice (I used basmatti)1/2 red onion4 tbsp pickled ginger, chopped1/2 cup peanuts4 dashes of Cayenne Pepper1 Tbsp Tahini2 Tbsp Soy Suace1 Tbsp Honey2 Tbsp RICE Vinegar
Cook Rice
Prep Dressing
Puree Peanuts with a couple tbsp of water.
Put Peanut mash, 2 tbsp of pickled ginger, cayenne, honey, soy sauce and vinegar in a bowl and stir thoroughly.
Heat sesame oil in a sauce pan add in onion and the rest of the ginger. Once the onions are softening add in the kale. Do not over cook the kale. Allow it to still have a nice crisp.
Mix the Kale dish into the peanut sauce. Serve over a bowl of rice.
