Healthier Carrot Cake

Ingredients
Self rising flour (2 cups)Granulated white sugar (1 cup)Raw sugar (1/2 cup)Olive Oil (4.5 tablespoons)Carrots grates (3 cups)Pineapple canned (1 cup)Apple sauce, homemade, unsweetened (1/2 cup) Cinnamon ground (1.5 teaspoons)Salt (1.5 teaspoons)Orange zest of (1 whole orange)Vanilla Essence (1.5 teaspoons)Egg (4 large, whole)BUTTERMILKLow fat skim milk (1/2 cup)White vinegar (0.5 teaspoons)
Directions
1)Preheat oven to 350 degrees. Cover olive oil in a 13-inch x 9-inch baking pan.

Combine flours, cinnamon, orange zest, salt, in a large bowl. Stir with a whisk. In another bowl, beat egg whites until soft peaks form.

Beat in white sugar and raw sugar and egg yolks followed by the applesauce and vanilla.

to make your buttermilk, (its easy!) for 1/2 cup of low fat skim milk and white vinegar, mix a little with a spoon and let it stand for 5-10 minutes till curds form.

Add to flour mixture and stir until just moist. Stir in the pineapple, carrots. Spoon batter into baking pan and bake for 35-40 minutes, until a toothpick inserted in the center comes out clean. Cool on a wire rack.
