ZuccZucc Rolls

3 Zucchini sliced with a cheese slicer lengthwise1 large cucumber, shredded3/4 carrots shredded1/2 cup dry unsalted cashews1tsp lemon juice1/4c water1 avocado1/4 cup Cilantro, chopped1/4 cup grape tomatoes1 tsp garlic powder1 tsp onion powder1 tbsp Chipotle Cholula
Soak Cashews overnight.
Puree cashews and lemon juice and water until smooth. Set Aside.
Puree avocado, tomatoes, cilantro, garlic powder, onion powder and Cholula. Set Aside
Grate cucumbers and carrots. Set Aside.
Slice Zucchini lengthwise with a cheese slicer to make thin strips.
Lay 6-8 Zucc strips layered one half on top of the other. Spread Cashew Sauce, and Guac mix along the top across all strips. Then place some of the carrots and cucumber. Roll like a burrito and enjoy!
