Chicken Tortilla Soup

Ingredients
2 tbs canola oil1 tbs cumin1 tsp oregano2 tsp minced garlic1 large onion, diced2 large green peppers, diced4 14.5 oz cans rotel tomatoes w/chilis2 32 oz cartons of chicken broth1 16 oz package frozen corn2 lbs cooked chicken breast
Directions
In a soup pot, heat canola oil and add cumin, oregano onion, and green pepper. Cook until softened.

Add tomatoes, and chicken broth and bring to a boil

Reduce heat and add corn and chicken. Simmer for 10 minutes.

Add desired toppings and enjoy!
