Chicken Tangine with Eggplant

Ingredients
Two large chicken breasts without boneOnionGarlicCorrianderTurmericEggplantLemon cut in quarterssalt pepperolive oilapple
Directions
lightly cook onion and garlic with 2 tbs. of olive oil at bottom of Tangine. Remove.
Brown chicken breasts turning a few times on each side.
add all spices onto top of chicken
Slice eggplant and cut into 1/2 inch x 2 inch strips and place on top of chicken
Add onions & garlic back on top of chicken and eggplant
Cube apples and place on top of eggplant

Place lid on Tangine and cook at very low heat for 2 hours.
