Jennifer's Homemade Quick Chicken Noodle Soup

Ingredients
2 T vegetable oil2 cups coarsely diced carrots8 stalks celery, chopped2 onions, diced1 pound chicken breast, cooked16 cups hot water8 T Better than Boullion chicken base12 oz uncooked rotini pasta
Directions
Heat oil in large stockpot or dutch oven. Add chopped vegetables and cook with lid on for about 10-15 minutes. Mix chicken base into hot water and blend with wire wisk. Add to the pot. Shred cooked chicken into bit sized pieces, and add. Bring to a boil, and simmer for about 30 minutes. Add pasta, and cook for an additional 20 minutes.

Serving Size: Makes about 24 servings at 1 cup per serving.
