Tomato coleslaw for the HCG diet

Ingredients
2 cups sliced or chopped cabbage1 small tomato cut wedges and then sliced crosswise into thin slices2 tablespoons thinly sliced onion2 tablespoons apple cider vinegar1 teaspoon Dijon mustarda few drops of liquid stevia (optional)salt and pepper to taste
Directions
Mix together the cabbage, onion, and tomato. In a small bowl or custard cup mix together the mustard and vinegar. Add a few (3-4) drops of stevia if you wish. Pour over the salad, sprinkle with salt and pepper and mix well.

Serving Size: Makes 2 servings of a little more than a cup each.
