Cream of Broccoli Soup

Ingredients
1 T Olive oil1 sm.onion chopped4 c. broccoli chopped2 c. chicken broth2 T Half and halfsaltpepper 1/2 tsp. curryCream Soup base:1 C. ricotta cheese1 c. milk
Directions
Heat oil in 3-4 qt saucepan over med. heat. Add onion and saute 3 min. Add broccoli and broth and bring to boil. Reduce heat and cover and simmer until broccoli is tender, 10-15 min. Remove from heat and cool slightly. Slowly stir in soup base, half and half, curry, salt and pepper. Puree with immersion blender. Heat through (but don't boil).
